General CommentsEHS observed effective thawing of previously prepared food items (Cooked Shredded Pork) within the kitchen. While placed to thaw, item was observed as having been date labeled for its initial preparation date (02/15). Establishment is advised to date mark food that is rotated from freezing to cold holding locations with a thawing date, so as to properly record and manage previously frozen TCS food items for use and disposition. For example, if chicken is initially cooked on 01/30, and rotated to cold holding on 3/10, the item should be marked for both the date of cooking, as well as the date of thawing, and will have five (5) additional days of use before requiring disposition.
