3-501.17 Date mark/label all TCS foods that are ready-to-eat once opened or prepared and held more than 24hrs. -Pf- Observed hot dogs, veggie dogs, and sausage all RTE and opened without date marks. According to the PIC the items were opened today and will be saved until Sunday. CDI- PIC was able to date mark the TCS items. NOTE: Ensure TCS items must bare a date the day of preparation if they are not going to be used the same day. |
