3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. - P - Observed sliced cheese and coleslaw holding above 41F in chest cooler (see temperature chart). Low amount of ice observed in cooler. Ensure adequate amount of ice is maintained in cooler at all times to hold TCS items at 41F or below or utilize TPHC. - CDI - PIC added ice to cooler to quickly cool items down.
