3-501.18 Discard the food requiring date labels once time/temperature window has expired, if it is not been labeled, or if the label is incorrect. 3-501.17 Date mark/label all TCS foods that are ready-to-eat once opened or prepared and held more than 24hrs. -Pf- REPEAT- Observed a zip lock bag dated for 4/1. Also observed sausage and hoit dogs opened without dates. PIC stated all items were opened and prepared from saturday. CDI- PIC voulintariliy discarded the hot dogs dated 4/1. PIC was able to back date all other packages of opened sausages and hot dogs. |
