3-501.19(B)(3) Follow written procedures for foods held using Time as a Public Health Control (TPHC) for 4 hours. Food shall be marked to indicate the time that is 4 hours past the point in time when the food is removed from temperature control. Pf: Found bologna sandwiches dated 1/2 in WIC at 44F. PIC stated they were surplus sandwiches from batch that had been brought out of WIC to be placed on TPHC for packing and delivery. Once food has been placed on TPHC, it cannot go back into refrigeration for storage. CDI- sandwiches voluntarily discarded. |
