3-501.19 Provide and follow written procedures for foods held using Time as a Public Health Control (TPHC). Clearly mark foods with begin and end times. All food not sold by the end of 4 hours shall be discarded. -P/Pf: Upon entry observed bag lunches containing ham sandwiches being loaded into cold holding bags for transport. Discussion with PIC determined sandwiches are on TPHC and will be labeled with time stamp from 11:00 to 3:00. Sandwiches were 50F at 10:23 AM. CDI- started TPHC at 9:45 when sandwiches were removed from WIC. Sandwiches are consumed as soon as delivered to site 30 minutes away. Discussion with PIC about how to maintain compliance for TPHC through accurate labeling of TCS food.
