3-302.11(A) Separate raw animal products from ready to eat foods -Pf Observed a tray of raw meat items that had been placed on the top of a storage rack by an employee. The storage rack contained items such as cooked hams on the lower shelves. PIC of the meat department immediately observed and rectified the problem. Insure that all staff are informed of proper storage order. CDI by PIC moving items to a separate area. |
