3-501.17 Date mark/label all TCS foods that are ready-to-eat once opened or prepared and held more than 24hrs. -Pf
Observed milk and half and half cold holding in the cold holding milk dispenser without date marks.
EHS explained to PIC and District Manager that milk and half and half are TCS food items, which fall under the date-marking requirements. Both explained they were not aware and have never been told to date-mark their milk and half and half bags, which come in a bag. EHS explained that no matter what they come in, milk and half and half are still TCS food items that fall under the same rules.
CDI: PIC created date-label for both TCS food items.
