General CommentsObserved multiple containers of fried chicken stored in WIC dated 01/01/25. Per Deli PIC, fried chicken is hot held on 3 hour TPHC (for quality not safety), cooled, and then used to make cold chicken products such as chicken salad. TPHC written procedures only indicate rotisserie chicken is used in this manner. Update TPHC written procedures if fried chicken is treated this way as well. Store manger stated fried chicken should not be cooled and reused.
