. 3-501.17 Date mark/label all TCS foods that are ready-to-eat once opened or prepared and held more than 24hrs. -Pf Observed chubs of deli meat with datemarking in place however the date was being extended by a day. Ensure that only a 7 day datemark is provided (include the day of opening). CDI- product datemarked as required.
3-501.18 Discard the food requiring date labels once time/temperature window has expired, if it is not been labeled, or if the label is incorrect. -P Observed a chub of boars head ham with a 8/7/17 date mark. CDI-product voluntarily discarded. |
