4-601.11(A) Equipment food contact surfaces and utensils shall be clean to sight and touch. -Pf. Observed soiled slicer stored as clean. Dried food debris was observed on sharpener and back side of blade. CDI - PIC removed slicer to be cleaned again and will check behind staff in the future. |
