General CommentsEHS spoke with Owner’s daughter named Sung and she explained some of the processes used. EHS also explained the following to Sung: 1. Prepared Kimchi and pickled or fermented foods must be cooled down quickly before putting in the Reach in coolers. Facility is no longer using the Walk in Cooler in the Super Mart. EHS discussed approved methods for quick cooling. EHS also left MCHD poster the cooling room temperature prepared foods. 2. The grab and go case is not holding TCS foods at 41F or below. Advised to look into another style case, keep in the glass display case, or put on time for 4 hrs and only put out a limited amount of product. EHS will email TPHC form to PIC. 3. Date marking items that are in the glass display case. EHS left business card for PIC to call if she has any additional questions.
