3-501.17 Date mark/label all TCS foods that are ready-to-eat once opened or prepared and held more than 24hrs. -Pf Observed two portions of cooked beef, one in reach-in cooler and one in reach-in freezer, not date marked. Per PIC, both items were cooked and frozen on Saturday, 09/18 and the item in the reach-in cooler was moved from the freezer on 09/21. CDI-EHS allowed PIC to backdate and educated PIC on proper date marking for frozen food items.
3-501.18 Discard the food requiring date labels once time/temperature window has expired, if it is not been labeled, or if the label is incorrect. -P Observed a container of cooked black beans dated 09/15 in reach-in cooler exceeding the maximum hold time of 7-days (09/21). CDI-PIC voluntarily discarded the product. |
