3-501.16(A)(2) Maintain TCS foods in cold holding at 45F or less. -P. Observed a few packages of sliced deli meats and cheese holding above 45F in the deli display case where pre-sliced meats and cheeses are held. PIC says they have had some trouble with this new case. Items are being held above floor of display case in shallow woven baskets. CDI - items had been sliced earlier this morning and were moved to the walk in cooler to rechill rapidly. PIC called for service as well. |
