4-501.114 Manual and Mechanical Warewashing Equipment, Chemical Sanitization-Temperature, pH, Concentration and Hardness - P Observed PIC filling up 3-comp sink with 114F water for the sanitizer. Solution states on the bottle it is a low temp sanitizer, need to follow manufactuers guidelines. When tested the strength was reading 500PPM. CDI-PIC dumped hot water out and started with fresh. It read 200PPM by end of inspection.
