3-501.16 (A)(1) Hot hold foods at 135. Observed baked chickens hot holding under heat bulbs at 128, one of the heat bulbs had burned out and not keeping chicken hot. CDI- Out of temp chicken cooked less than 2 hrs earlier was pulled to begin cooling process, heat lamp bulb replaced. |
