4-601.11 (A) Equipment, Food-Contact Surfaces, Nonfood-Contact Surfaces, and Utensils - P. Mold build up on 12 soda diffuser nozzles at the self service beverage area. CDI- Operator; Farrukh Mahmood removed all for cleaning. Extra soda nozzles that operator advised were clean, were soaking in a heavily stained bucket that also had dried residue in it. CDI- Operator was advise that the container being used in the cleaning and/ or soaking of the nozzles must also be clean and free of debris. Operator advised that possible residue could be from coffee. CDI- Nozzles and bucket were cleaned.4-501.114 Manual and Mechanical Warewashing Equipment, Chemical Sanitization-Temperature, pH, Concentration and Hardness - P. Quat sanitizer in spray bottle next to alto-shaam at over 400ppm. CDI- sanitizer corrected per label directions to 200ppm for Quat. |
