All food not sold by the end of 4 hours shall be discarded. -P/Pf - Facility has variance for pizza sauce. Observed 8 hour hold Variance approval letter but pizza sauces not dated by date made on sauce behind counter or time sauce was made per procedure requirements and PIC stated sauce previously held out of refrigeration by using TPHC yesterday. CDI, sauce voluntarily discarded by PIC. Repeat. |
