Observed facility’s 3-compartment sanitizer dispensing system unable to produce adequate sink and surface concentrations (read at 0 P.P.M.). EHS instructed employees and PICs on how to manually make sanitizer solution. PIC manually made sanitizer solution with concentrations registering at 272 P.P.M. Observed several TCS foods to be > 41 F inside refrigeration units. All but one product was confirmed to have been prepared this morning prior to inspection. Refer to temperature chart. CDI - Items from this morning were relocated to walk-in cooler and the remaining food was voluntarily discarded. EHS discussed with PIC about implementing temperature logs for cold holding items.***3-DAY VERIFICATION REQUIRED TO ASSESS TEMPERATURES AND MONITORING LOGS. |
