3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P REPEAT. Observed several packages of sliced deli meats, deli cheeses, tuna/chicken salad croissant sandwiches, macaroni salad, sliced deli meats from online orders, fried chicken, bbq chicken, buffalo chicken, croissant sandwiches, and hoagie sandwiches maintaining temperatures above 41F. See chart above. CDI - All items that have been there overnight were voluntarily discarded. All other items taken to WIC for cooling. VR to be done on subs reach in unit by 7/18.
