3-501.16(A)(2) Maintain TCS foods in cold holding at 45F or less. -P Observed salad bar items holding above 45F in at entrance of walk in cooler due to door being constantly opened because of a store remodel in deli area. PIC stated temperatures were taken of items during a line check an hour prior and were holding below 45F. Items held deeper in cooler were under 45F. CDI-all products moved to colder space in walk in. |
