3-501.17 Date mark/label all TCS foods that are ready-to-eat once opened or prepared and held more than 24hrs. -Pf Observed 3 chubs of cut salami and pepperoni in deli case not date marked. CDI PIC stated that they were cut in the last 2 days and she date marked the chubs. EHS explained that the package says keep refrigerated and therefore needs to be date marked. REPEAT
