3-501.17 Date mark/label all TCS foods that are ready-to-eat once opened or prepared and held more than 24hrs. -Pf Observed sliced deli meat, whole roasted chickens, and cooked chicken in WIC not date marked. PIC stated chicken was cooked yesterday. Observed 3 sliced salami chubs, marked keep refrigerated, in deli with no date mark. CDI PIC put DM on deli meat, whole roasted chickens, and cooked chicken in WIC. PIC did not know when salami was cut. PIC voluntarily discarded sliced salami in deli case.
