-Observed cheese dip held past its 7-day timeframe (prep date of 6/22). -CDI- PIC voluntarily discarded the cheese dip.
-Observed diced steak without a date mark. PIC stated it was originally cooked yesterday, then cut today. -CDI- PIC properly added date mark.
-Observed opened container of garbanzo beans without a date mark. -CDI- PIC verified when beans were opened and properly added date mark.

3-501.15 Quickly cool foods. Use methods such as open/vented shallow pans, large ice baths and active stirring. Cold air must flow around product to remove the heat. -Pf
-Observed cut steak cooling in large metal pan in prep unit low reach-in cooler. -CDI- PIC immediately moved steak to WIF for rapid cooling. By end of inspection, EHS observed steak cooling at sufficient rate to reach 41F within 4 hours.
