Cold air must flow around product to remove the heat. -Pf -Observed cut steak cooling in large metal pan in prep unit low reach-in cooler. -CDI- PIC immediately moved steak to WIF for rapid cooling. By end of inspection, EHS observed steak cooling at sufficient rate to reach 41F within 4 hours.
