EHS observed HH items held out of temperature range during processing; Items were cooked/reheated for hot hold and placed in containers and food employee was preparing stickers for items. During this time, items lost temperature and were below 135F. EHS educated PIC on not letting items sit out too long during processing as this may be the cause of items not properly holding hot temperatures.
