GENERAL COMMENT: 4-204.112 Provide and position correctly an air thermometer in cold/hot holding equipment. Could not find air thermometer in packaged salad fridge, fridge holding all pre-packaged items is NCDA jurisdiction. Facility has dial stem thermometer, food code recommends thin probe thermometer if using for thin foods. |
