Cold air must flow around product to remove the heat. -Pf - Observed wings cooling on the bottom rack of the oven (bottom rack was turned off). Wings were 89F; PIC stated they came out of the oven 30 minutes ago. CDI - wings were placed in the walk in cooler to cool; wings were 48F after an hour. |
