3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P.Observed pasta and spinach cold holding above 41F. PIC states foods are thawed in walk in cooler then placed in containers and moved to 2 door reach in cooler for storage. Observed chicken and beef in same 2 door at 41F. CDI, voluntary discard of pasta by PIC and spinach moved to walk in to cool. Observed internal temperature of 2 door reach in cooler at 42F. PIC states they will place service request in for unit. EHS advised PIC to place all TCS foods in walk in cooler while unit is serviced.
