3-501.17 Date mark/label all TCS foods that are ready-to-eat once opened or prepared and held more than 24hrs. -Pf Observed chubs of turkey pastrami with greater than 7 day date marks, obser ved chicken and turkey chubs with no date marks , Store cut brie labeled for 7 days at 43 degrees should only be labeled for 4 days. CDI discarded all unmarked and out of date chubs and corrected by instruction labeling on brie. Repeat violation. |
