3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P Observed display cases holding product in the front above 41F. Product in the back was at or below 41F. CDI: Products moved toward the back or placed in walk in cooler due to temperature checks. Cases are set to 32F, however there is high humidity in the store and it appears the cases may need defrost cycle adjusting due to the change in ambient air. Maintenance tech will be here within an hour to look at the cases. |
