3-501.16(A)(2) Maintain TCS foods in cold holding at 41 F or less. - P. Observed various TCS foods to be cold holding > 41 F at grab & go unit. Some products were prepared an hour prior to inspection and several items were inside of the unit overnight. EHS observed the unit’s ambient temperatures registering between 38-40 F. CDI - Products prepared today were transferred to walk-in cooler to cool down, remaining foods were voluntarily discarded. -1.5-
