3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P- Observed multiple foods (mozzarella sticks, chicken wings, salads) in grab and go case above 41F. PIC stated salads were placed in grab and go case from WIC less than two hours ago. PIC stated mozzarella sticks and chicken wings were placed in grab and go case last night. Foods above 41F were located at front of grab and go case. Foods towards back of case were below 41F. -CDI- PIC voluntarily discarded the chicken wings and mozzarella sticks above 41F. PIC placed the salads above 41F in the WIC for rapid cooling.
