3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P Observed chubs of deli meat in cold case cold holding at 41-46F. Case has been an issue on past inspections. Closest to the condenser line, temperatures are 41F. Furthest points from condenser line, temperatures are 46F. CDI - PIC educated about the change in cold holding temperatures. EHS advised that 46F is a violation of previous and current cold holding temperature parameters and points shall be deducted until TCS foods are cold holding at 41F or less in the facility. -1.5- |
