_3-501.17 Ready-To-Eat Potentially Hazardous Food (Time/Temperature Control for Safety Food), Date MarkingObserved the date marking process to generate a discard day of 7/17/2013 for a package opened today on 7/10/2013. This is not acceptable as the first day of the deadline countdown has to be the day the item is opened or cooked/prepared. An item opened on 7/10/2013 cannot be used past 7/16/2013. Also, if an item is made with a previously dated ingredient, the date of the oldest ingredient is used for the newly made item. Ensure that the cheeses are either exempt from date marking or that they are properly date marked. -CDI by instruction. |
