4-903.11 (A) Store cleaned equipment, utensils, linens in a clean, dry location; where they are not exposed to splash, dust, or other contamination; and at least 6 inches above the floor. Observed cleaned cutting knives stored against between wall and shelving of drying rack of 3 comp sink. Knives have been set aside to be rewashed before next use and PIC stated a knife strip will be added to properly store clean knives. |
