3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P
Observed various TCS foods being held above 41F in flip top portion of pizza make table. TCS foods in bottom reach-in portion of unit meeting temperature parameters. Products with various prep dates. PIC stated all product pulled at end of each night, held in walk-in cooler, then pulled @10am each day. PIC voluntarily discarded product. EHS provided TPHC form for facility to utilize until unit repaired. Ice as means of cold holding not suitable for long-term means of compliance. EHS will return within 3 days to verify unit properly maintaining TCS foods at or below 41F. VERIFICATION REQUIRED. |
