3-501.14(B) Quickly cool TCS foods that are prepared from room temperature ingredients. Food must be to 41F within 4 hours. -P. Observed sliced ham (Cooling rate .06 degrees per minute) and blue cheese (cooling rate .03 degrees per minute) did not meet proper cooling rate of .12 degrees per minute. CDI- PIC unwrapped tightly wrapped plastic bags of sliced ham and blue cheese to promote faster cooling rate.
