3-501.19(B)(3) Follow written procedures for foods held using Time as a Public Health Control (TPHC) for 4 hours. Food shall be marked to indicate the time that is 4 hours past the point in time when the food is removed from temperature control. Pf - Observed the bratwurst, hot dogs, and hamburgers held in the hot box at the front counter to be held using 4 hour TPHC at the time of the inspection and were not labeled with start and discard times. Concession stand is only open from 11-2pm today and all items are discarded at the end of the event.
