Observed no written procedures for approved TPHC for holding pizza sauce at room temp for 10 hours.
PIC contacted the GM to locate the written procedures in the office, but could not provide them.
VERIFICATION REQUIRED within 10 days to ensure facility is in compliance.

Observed no start and discard time for pizza sauce held at room temp for 10 hours.
PIC stated that there was a label on it prior to the inspection, but that it may have fallen off. PIC stated that the pizza sauce was brought out at 10:00AM this morning.
CDI: PIC created start and discard time for pizza sauce held for 10 hours, since it hadn't surpassed the time frame. |
