Observed TCS foods stacked too high on the buffet and holding at >45F. Walk in is holding foods at 45-46F today- maintanance states that it was on defrost and a delivery had just been made. Products from the salad bar were not able to be cooled down quickly enough and were discarded, along with TCS items in the walk in cooler. Staff is instructed to keep foods covered, be aware of possible cross contamination, but use the deli or meat dept cooler until repair is made. Call EHS within 10 days to check on repair.
