4-501.114 Maintain sanitizer at correct concentrations when being used to sanitize. -P Observed 0ppm of sanitizer at the 3-compartment sink. Found that the bag was completely empty. CDI-The compartment was drained and a new bag of sanitizer was brought out. All of the equipment that was air drying was placed back into the sanitizer.
4-601.11(A) Equipment food contact surfaces and utensils shall be clean to sight and touch. -Pf Observed buildup on the knives stored in the knife holder. CDI-The knives were brought back to the 3-compartment sink for cleaning and santizing and the knife holder was properly cleaned and sanitized. |
