3-501.15 Cooling Methods Observed items to not be properly cooled before being placed into display coolers. These coolers are not strong enough to cool items, they are designed to hold items cold once they are cold. The egg rolls noted in the temperature log were actually warming up the items around them. Always properly cool the item and check them for temperatures of 45F or less before they go into the display cases. This included the sushi items. -CDI Items were removed for cooling. |
