3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P Observed provolone cheese and shredded lettuce in the sandwich station above 41F. PIC stated that It was just sliced and put into the unit about an hour ago. CDI PIC put items in the WIC to cool down quickly.

6-501.111 Keep the premises free of insects, rodents, and other pests.Observed multiple flying insects throughout the deli. EHS did not observe any cross contamination. PIC stated that pest control was here last week and they were called again yesterday. Facility has received a complaint about the flies. |
