3-501.15 Quickly cool foods. Use methods such as open/vented shallow pans, large ice baths and active stirring. Cold air must flow around product to remove the heat. -Pf Observed salsa, tomatoes, and chicken cooling in deep pans with lids half covering the pans. EHS observed that the cooling rate for salsa and chicken are not being met. PIC stated that this is not typical cooling procedures but they have more food than normal in the WIC from Cinco de Mayo. CDI- PIC moved these items to shallow pans to help with cooling. In addition to shallow pans, PIC and food employee added ice to product to ensure rapid cooling.
