3 1 Management, food & conditional employee; knowledge, responsibilities & reporting Yes No No 2-103.11(O) Ensure food employees are informed of their responsibility to report required symptoms, illnesses and exposure.-PF Observed PIC has signed employee health agreements for staff, however the agreements have only 5 illnesses listed. CDI: EHS emailed PIC a copy of the newest employee health agreement which includes nontyphoidal salmonella during the inspection. For more information on employee health policy, please visit: http://meck.co/FoodSafety
15 1.50 Food separated & protected Yes No No 3-302.11(A)(1) Separate raw animal foods from ready-to-eat foods and washed/unwashed fruits and vegetables. -P Observed raw shell eggs stored behind fully cooked chicken in the prep top. CDI: Items moved. For more information on food storage order please visit: http://meck.co/FoodSafety 3-304.15(A) Discard gloves after a task is complete or any time they are damaged or soiled. -P Observed employee repeatedly handle raw shrimp and raw shell eggs with gloved hands and then handle clean plates that fully cooked food was placed on for serving and that went out to the customer. CDI: EHS and PIC discussed a better process such as having just one employee handle raw items and the other employee(s) on the line handle the clean plates and fully cooked items. Alternatively tongs could be used for the raw proteins, aside from eggs which would limit some raw protein handling and glove changes. Employee changed gloves and washed hands.
22 0 Proper cold holding temperatures Yes No No 3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P Observed fried tofu stored in a pot on top of other containers in the prep top unit. Product was above 41F. CDI: Product relocated to inside the prep unit reach in area. For more information, please visit: http://meck.co/FoodSafety or view our training videos at the following weblinks: What are TCS Foods https://youtu.be/bRvqAETDjQU and Safe Food Temperatures https://youtu.be/tXP09IK-1TQ .
47 0 Equipment, food & non-food contact surfaces approved, cleanable, properly designed, constructed & used No No No 4-501.11 Maintain equipment in good repair. Observed gasket on right side door of salad cooler damaged. Observed some shelving in walk in beginning to rust.
54 0 Garbage & refuse properly disposed; facilities maintained No No No 5-501.113(B) Keep dumpster, outside waste containers covered with tight-fitting lids or doors. Observed lids on cardboard dumpster have been broken off and are no longer present. EHS urged PIC to contact landlord so that a new dumpster can be provided.
56 0 Meets ventilation & lighting requirements; designated areas used No No No 6-403.11 (A)Areas designated for employees to eat and drink, shall be located so that food, equipment, linens, single service/use items are protected from contamination. Observed employee food stored across 2 speed racks in the walk in cooler above meats, shrimp and eggs used for facility. Ensure employee food is stored away from food designated for the restaurant. EHS suggests combining employee food to one whole speed rack due to the volume of food that PIC stated is for employees only.
