General CommentsEHS notes this as the fourth consecutive inspection with TCS foods above 41F in make-top. To address ongoing non-compliance, a Risk Control Plan is being established to begin tomorrow, 03/18/2026. EHS will conduct follow up as necessary to ensure compliance is established and maintained. EHS also provided forms and education on TPHC, which can be used in the make tops. Due to absence of probe thermometer onsite at present, EHS oversaw set up for TPHC to use today, while thermometer is urgently obtained by staff. TPHC written procedures: https://mecknc.widen.net/s/pvtc855zds/tphc-template-english 1. Ensure items starts at 41F and below. 2. Record start time. All 6 hours if food will not exceed 70F, 4 hours if they will. 3. Discard remaining food on TPHC at end of usable window. Record disposal in log.
