3-501.18 Discard the food requiring date labels once time/temperature window has expired, if it is not been labeled, or if the label is incorrect. -P EHS observed a container of anchovies in lowboy with an expired date mark. PIC stated that anchovies came from can and have an extended shelf life. EHS educated PIC that once anchovies are opened and placed in new container that the new shelf life is 7 days. CDI PIC voluntarily discarded anchovies . -1.5 points
