3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P Observed a few products at cold prep line (left side) holding above 41F, see temperature chart, right side of unit was properly holding temp. EHS found that lids were off of products during lunch rush and a few products had just been prepped and put directly into unit, causing rise in temperature. EHS found that salsa cooler was holding salsa around 50F, found that multiple pans were missing in top of unit with lid open, causing air to escape and rise temperature of unit. CDI- all products out of temperature at cold line moved to walk in to cool, EHS discussed ensuring products just prepped are cooled in walk in before placing on line. PIC showed EHS that salsa cooler was at temp this morning from temp checks, PIC placed pans back into missing spots and unit started dropping in temperature from 55F to 45F within 15 minutes. Unit holding at proper temperature by end of inspection. PIC will ensure unit is properly functioning before storing salsa in this location overnight, will discuss not leaving lid open with employees.
