No |
3-501.18 Discard the food requiring date labels once time/temperature window has expired, if it is not been labeled, or if the label is incorrect. -P Observed three (3) food portions marked with preparation dates greater than 7 days prior (8/2 crab cake pan and 7/6 cooked pork jus in WIC, 07/31 cooked pork in grill side prep unit). CDI - PIC voluntarily disposed of out of date food items.
Note: PIC stated that pork jus was dated from having previously been frozen, hence the considerably far removed date. If TCS food is previously frozen, EHS advises PIC to facility to write a thaw date on TCS item, so as to establish its new date in its remaining hold time.
PIC has stated that items are prepared daily and placed in prep top points of preparation. If portions are held for greater than 24 hours, portions are then datemarked and placed back into points of service.
