3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P- EHS observed several soft cheeses, hard cheeses, and blue cheese stuffed olives above 41F. A VR will occur within 3 days to ensure TCS foods are kept at 41F and below. PIC moved all items to walk in cooler to quickly cool.
